ACF Training, Certification, and Upcoming Events
|The American Culinary Federation, ACF, certification signifies the
highest level professionalism in the industry. The ACF is also
recognized as the authority on cooking in America. Renton Technical
College, in partnership with the ACF, are excited to offer this new
opportunity. This program is open to military servicemen and
women, as well as the general public in the following professions:
- Culinary Educators
- Foodservice Managers
- Food preparation personnel

- Certified Chef de Cuisine (CCC)

- Certified Culinary Educator (CCE)

The partnership will be offering the following training:
- 60 Hour Course - Two week intensive training to include lectures, demonstrations and kitchen hands-on practice of the fundamentals
of cooking in an effort to improve already learned cooking and baking skills. In addition, this course will assist a Culinarian in preparing for the
American Culinary Federation certification test for Certified Culinarian exam. Deboning chicken, filleting a fish, various cooking methodologies (poaching,
roasting, braising, stewing, sautéing, broiling, frying, etc.) knife skills for various vegetable cuts, basic dressings, marinades, and sauces will all be
reviewed, demonstrated and completed in this fast paced course. Important sanitation techniques will be stressed throughout this course.
- 16 Hour Refresher Course - This two-day course will assist you
in preparing for the American Culinary Federation (ACF) Certified Culinarian exam.
Students have an opportunity to practice their knife skills, cooking methods, deboning
chicken, filleting fish, making tomato concassée and other exam requirements. Come
prepared for this high-speed culinary opportunity before the next ACF certification
- Continuing ED Courses - Various Continuing Education Courses
This four-hour practical examination is for the American Culinary Federation (ACF) practical certification exams. Students
need to contact the administrator two-weeks prior to the exam and identify which
ACF practical certification examination they would be testing for. Navy students
will have a military voucher that is redeemed by the Navy.
Testing takes place from 7am-12noon on the following dates:
